Contains over 500 complete bills of fare, menus from Delmonico's for the years 1861-1894, recipes for all bill of fare items, and basic cooking and preparation techniques for numerous food items. Anticipating Julia Child by nearly 70 years, this is a wonderful and exhaustive compendium of French and American cooking from the late 19th and early 20th centuries. In great condition for its age, uncommon in this edition.
